Spring Macarons
Difficulty rating: medium to difficult. Patience required!
What you’ll need:
Macarons
- 1¾ cups confectioners sugar
- 1⅓ cups almond flour (I like Bob’s Red Mill) or ground almonds
- ¼ tsp salt
- 4 egg whites
- ¼ cup superfine sugar
- *gel food coloring if desired
- **piping bag fitted with a #806 Ateco tip or equivalent
Vanilla Swiss Meringue Buttercream
- 5 egg whites
- 1 cup sugar
- 14 oz unsalted butter, softened
- 1 vanilla bean, scraped
- 1 tsp vanilla extract
Egg Dying & Decorating
Difficulty rating: easy
What you’ll need:
- 1 teaspoon of white vinegar
- 1 cup of hot water in a heatproof bowl
- eggs – hard boiled or blown out (see below)
- liquid food colouring

Blowing eggs: ‘To empty a raw egg, begin by using the tip of a sharp utility knife to pierce both ends of the egg; turn the knife in one of the holes to widen it slightly. Then, poke a straightened paper clip through the larger hole to pierce and “stir” the yolk.
